
Creamy White Bean Chicken Chili
1 lb. boneless skinless chicken breasts, cut into 1/2-in cubes
1 med. onion, chopped
1-1/2 t. garlic powder
1 T. veggie oil
2 cans (15-1/2 oz each) great northern beans, rinsed and drained
1 can (14-1/2 oz) chicken broth (*I used 1-1/2 cans)
2 cans (4 oz each) chopped green chilis
1 t. salt
1 t. ground cumin
1 t. dried oregano
1/2 t. pepper
1/4 t. cayenne pepper
1 cup sour cream
1/2 cup whipping cream
In a large suacepan, saute chicken, onion and garlic powder in oil until chicken is no longer pink. Add beans, broth, chilies and seasonings. Bring to a boil. Reduce heat; simmer, uncovered for 30 minutes. Remove from the heat; stir in sour cream and whipping cream. Serve immediately.

- Personal touch - I don't like the texture of onions, so I use onion powder because I do enjoy the flavoring. [lol sorry if that's weird] Also, we LOVE to put Fritos in the bowl first then pouring the chili over it and mixing it all in. It's fabulous! I do hope you enjoy :] -
